The Pies may not seem the worldliest ponies, but the train does go near their home, and obviously the farm needs to be able to ship its goods on to the rest of Equestria. And there's Maud's schooling (also reached by train) - she'd probably been looking before she applied, if only to see what kinds of rocks were on campus. So just how often has the family gotten out? Perhaps they've had camping trips in the past, or gone along to meet new trading partners. It's hard to say without knowing!
Maybe Iggy and Big Momma Q have met Celestia before.
