They're just for show, mostly because they come in lots of colors. It's bling, and it's supposed to show your attention to detail.
There was a time the standard mountain bike headset was shitty, and King headsets were a serious upgrade because they failed less. Then Crane Creek invented the split conical ring, and King didn't want to pay the licensing fees to admit his headset was inferior, so he kept making his inferior headsets until the patent expired.
In the mean time, Cane Creek has been making the best headsets, with a 110-year warranty that is better than a lifetime warranty, and made in America, just like King headsets. The difference is King is a smaller more independent shop with lots of color aftermarket parts. Crane Creek is tainted by the fact that in addition to top quality parts, they also make lower end parts which are found OEM on some bikes and come in black.
But yeah, even a cheapy headset nowadays is plenty good unless you buy bottom of the barrel junk like Sunlite parts for restoring old beach cruisers.
