Snowmachines, ATVs, dunebuggies, dogsled... Basically anything that isn't done under your own power. I think dogsled would be especially good because it could involve her helping with the dogs even when they aren't pulling the sled.

One of my neighbors has an all wheel drive off-road wheelchair thing, setup to run off of an old engine from a mower. His son built it for him so he could still go out in his fields, he even deer hunts from it.

i have picked up a slab of concrete the same size once, for me it's not much easier with a bar because it's slippery and my fingers are not very strong (programmer fingers). if i can hug it to my chest i can lift heavier. i have brought wrist straps to test my true limit but never used them.
