deer do not have much muscle around the ribs or in their torso. the main parts of meat from a deer are the backstrap, which could be made into medallion steaks, and the tops of each leg called the flanks.
the best part of a deer is of course the backstrap. then the top portion of the hind legs, this makes excelent sausage. the rest, in my opinion, is best ground up and used as chili meat. some people cube it for stew, others slice it for grilling. but it would make a shitty steak.
other than slicing up backstrap, i have never heard of 'deer steak'.
