Nowadays, a mirrorless system camera does everything a dSLR does, including manual focus, manual settings, RAW capture, etc.
There are even point and shoots that do all of that now. There always have been, but now there are more, probably due to cell phones replacing low-end P+S.
If she wants more (like 1970's more) manual control, I would recommend Fuji's X-Series mirrorless. Barrier there is price; they are expensive.
If she wants something with more lens choices (now and future) I'd say the Sony a6000.
With the way the mirrorless landscape looks, I could never recommend a dSLR to a non-photog, even one that wants to learn. There is just no point. I'm very tempted to get rid of my dSLR and go mirrorless sometime soon, especially with the supposed death of A-mount.
