Some empty their pockets to the employees holding them, sort of confessing, in order to let go before the police arrives.
They usually hold people after watching them on cam or when an employee witnessed someone putting it into the pocket AND after they walked out without showing it at the registers. Most will say that they just forgot. But then again, these are mostly minor items.
Most steal cigarettes. These are always directly in front of the registers here in Germany, so employees often see this and alarm someone.
They also have a detective there regularly. Now more often than before. They also have someone sitting at the monitors now all the time.
Personally, I suspect that there are groups and they let some loser do some stupid obvious stealing and when the employees are busy with him, showing the police the videos, the others use that confusion and pick a lot more and go for it.
