what would happen IRL: the air around the "ice beam" would condense and form snow and ice crystals. These would quickly expand and set off the laser alarm systems. And even if they didn't the lasers would still be there and the only difference is that the walls/ground would be covered in frost.

The alarm detectors are likely in a central server room just waiting for any number of connections in the entire building to be broken.

And freezing those likely sets off a secondary set of alarm detectors waiting for the primary detector to shut down.
