civil or whatever engineers i have a question for you- how do build structures on/in the ocean?

take for example this oil refinery - how do you actually get those support pillars down to the ocean floor, and plant them so they are solid and can support the whole structure?

similarly, can something like Rapture from bioshock or SeaLab 2021 actually be built?

what about this one

for the floating example one, how do they build and transport the platform?

In little incremental stages starting with a wellhead sunk into the sea floor by Remotely Operated Vehicles and adding steel fabricated sub-sea modules fitted/welded by divers, with various tools centered around the drill pipe.
Most pieces of an oil rig, at least sub-sea, can be broken down to fit on a truck bed.
Usually 12 foot squares
The support structures would be shipped in as a section of a tube and welded or bolted together after they are lowered to the sea floor, then stayed with cables from bolts sunk into concrete or anchors.

I image almost all of them float. It's very difficult to build anything large from scratch in the middle of nowhere.

Probably in a similar manner to the hull of a large ship. The thing is assembled in a dry dock or slipway, then pushed out to sea and towed to it's final destination. Some will be carried on barges, while others will contain large hollow sections which are flooded at the destination to "sink" it and set it on the sea floor.

2: Make concrete legs using slip casting in dry dock. Fill dock with water and two leg structure into position. Use huge crane to lift deck into position. Populate structure. Tow platform to position. Flood internal chambers in legs to reduce buoyancy.

Most of the time they float, because it is cheaper, in terms of maintenance, rawmaterials and construction.

But some of the older oil rigs is standing on the ocean floor. They were built in drydocks, and moved to its designated spot. The weight of the construction is enough to hold it rigidly to the floor, and the support is worked out from the construction material. Pic related is Troll platform stationed along the coast of Norway.
