How would the Fe(III) group orbitals interact with s and pz orbitals of O? Would the 's' interaction be between Fe's dz^2 orbital and O's s orbital?

Not when bound like that, no. Two sigma bonds and two lone pairs. It's sp3.

You can make MOs directly from AOs w/o invoking hybridization - it's just a different model of bonding.

I still can't think of any orbitals of Fe that would have decent overlap between s or pz orbitals of O. Dyz, Dyx, Dz^2, Dx^2-y^2... none of them overlap with O, I'm frustrated!

To combine AOs into MOs the AOs must have the same symmetry, here symmetry about the Fe-O-Fe internuclear axis.

Fe dz2 and Opz, at least, would qualify.
