That's because Let's Play Live (the title of the event) was performed before one of the guys left to do his own thing) and they usually do let's plays of various games on their youtube channel:

Monday is GTA V, friday is Minecraft, and then throughout the rest of the week they play other games. The videos are let's play style so they're ~30 minute edited videos of all of their perspectives in whichever game they play. (And it's not just one of them playing and the rest watching and commenting on it, it's all of them playing. Unless it's the "Let's Watch" show. In that case it IS one of them playing and the rest watching and commenting.) they don't do streams or play arcade games, and I don't know what PAX style is, so it could be like that.
The documentary isn't like a big let's play though. You'll see.
