Basically, except for the odd deathtrap, it's really only interesting if the gravity changes.
(While I've seen corridors that twist so that orientation changes unconventionally, there's one twist I don't often see: changes of chirality. This would invert the players "handedness", like a mirror, so that everything in the dungeon would appear to be flipped left/right upon exiting. Could be very disorienting if you're not expecting it. Also has possible puzzle uses, like flipping a left-handed screw into a right-handed one)
