How do you handle the act of redeeming Evil creatures in your games? Is it an option at all for your PCs, or are they barred from even trying?

Do demons/devils take advantage of PCs and other characters trying to redeem them?

Do any physical changes occur as a result of redeeming a creature composed of Evil energies, or are these changes purely mental?

I have an order of Clerics who make this their express purpose. They try and convert Orcs and other such creatures to the side of Light in an attempt to weaken the Plane of Negative Energy. The way they see it, if they can prevent evil Souls from being sent to the various Hells they'll deprive them of power.

I hate the idea of a specific alignment for non-demonic races. One of the characters that's (kind of) in our campaign is Grog the Grumbler, a bugbear who decided he wants to do good. He's still gruff and a little self-serving, but entirely willing to help people if he thinks it's the right thing to do.

Actually been doing another campaign as a neutral necromancer turned bard who uses skeletons to form a band that plays tropical music.

My players have literally never even considered trying. They'll kill anything that puts up even a token resistance, sparing none and going as far as to chase down those who break and run. If they know their victims are Evil, all that does is give my players a smug sense of validation when the slaughtering is done and they're counting the XP.

If redemption were to come up, since we play DnD then the appropriate rules would be used. Redeemed outsiders would retain the markers from their native plane (so a redeemed Devil would still be affected by effects that target Lawful and/or Evil). A demon or devil can certainly be smart enough to try to manipulate mortals into redeeming it while really they're pawns in its larger game, but unfortunately my players aren't smart enough to be easily manipulated, they'd attack any fiend on sight.

But I wanted there to be absolute evil, so I made a caste of demi-demons that had their souls partially consumed and replaced by fragments of demons. Generally, they act the same as before, but having your soul ripped out is a willing process so these people were dicks anyways. But if the demon needs it, they can override their choices and control them to force them into doing something. So say, a tiefling might never do anything out of the ordinary, until their "patron" realizes they're holding an aasimar baby. Next thing you know the baby's dead, and the tiefling is skipping town through a series of unbelievable coincidences the demon is manipulating from a few thousand miles away.

Not really, I feel like that's a dickish thing to do if the PCs want to do it, if the monster just tries a "I'll be good, honest" then it's a 50/50 chance

Most of the moral question of what to do with evil creatures typically ends with 'can we weaponize it?' Especially in the groups I run. You can't redeem something as pure evil as a Tarantula Hawk. Just like you can't make something as full of unceasing anger as a Box Jellyfish calm. To do so to either would destroy what makes up its being.

Basically, the paladin beats them up SUPER HARD, then forces them to do community labor while watching from afar.

When the thing inevitably falls back into evil ways, the paladin jumps out and beats him up again.

The paladin usually puts ranks into sneak or hide specifically for this purpose.

Eventually, the evil being develops the belief that he is always being watched by the paladin- which is entirely true, for the first period of time. Eventually, once the demon is firmly of the belief it can't act out without being beaten by an all seeing metal plated fanatic, the paladin quietly moves on, to his next redemption target.

They don't gotta be good, as long as they aren't evil!

Next time your players end up in a town, have an NPC count their XP.

Tell them it's actually eXecution Points.
