When they get there, there is an extreme restriction on Protestants and the only real churches and protections are offered to Catholics. Learning the language was done by plenty of Anglos, the majority of which lived in Austin's colony. There were no customs to adapt to, there was hardly a single concentrated group of Mexicans in northern Texas because of the frequent raids by the Comanche. Simple as that, really. Loyalty to Mexico became an issue as well when their autonomy as a state was removed, all authority over them handed to a large, large amount of Mexicans that greatly outnumbered them many miles from their own settlements, and when their tax-exempt free status to help them build up their territories was suddenly removed without any oversight from anyone, and also the direct command from the Mexican capital that several thousand Anglos were to be kicked out, papers or no.
Also, Stephen Austin, Mexico's most ardent Anglo protector, was locked up on suspicions of treason when he was one of the last majority Texan leaders still massively in support of the Mexican government as a less federalized, more liberal government than what the U.S. was becoming. A lot of the Anglos came to Mexico with a dream like Austin, a more fair, and just Republic. What they got instead was fear, mistrust, and rebellions. Hell, Santa Anna campaigned for the Anglos trying to appeal to their senses, promising to give them better representation and more protection.
