Each island is filled with tourist trap/ time share Luaus and Ive been to most (I worked for a time share on the islands every summer).
The only one worth to see is the one at the cultural center. It is the largest one I have seen, it is held in a sort of a stadium. Plus you get to walk around the mock village with outdoor exhibits of the different island cultures.
Anyways, give it a consideration.
If you end up going to the island of Maui, one of my favorite areas to snorkel is Molokini crater. You have to go with a group on a boat to get there, schedule 1-2 weeks in advance. But since you are going in winter, a few days notice should be fine.
Also on Maui, if you take the road to Hana, it takes you through some jungle to some beautiful beaches, and some cool places to jump off cliffs into the ocean if you are into that sort of thing.
