1) Driving up to the top of the east Maui mountain to see dawn from above the clouds (overrated for anybody who has seen dawn from an airliner), then a few short hikes on the way down -- one along the edge of Haleakala crater, one part of an organized hike guided by a park ranger.
2) Snorkeling expedition to Molokini island. My mask tends to flood though -- I blame my mustache.
3) driving the road to Hana, stopping for a few short walks in the rain forest, and, at the end, walking up the "sacred pools" hike to some waterfalls.
4) swimming in the warm ocean water by my hotel/condo.
5) grocery shopping in Lahaina.
I had had my tourist luau on Oahu already, so didn't even try on Maui.
