Okra - holy balls this crap is amazing. You can find raw okra at some stores and it'll be okay, you'll just need to find something to do with it. Steam it with lemon juice, season the heck out of it however you want, whatever. Don't eat it raw, though, because the store-bought stuff is, like I said, kind of okay. If you grow it yourself feel free to pick some off the stalk, wash them off, and chow down. I can't even begin to describe how amazing it is. Be wary that okra doesn't hold well.
Sweet potatoes - I'm pretty bad at cooking them so I won't advise you on that. Find some instructions online. But seriously, you don't even have to do anything to them, just bake them and they're great. Add a little brown sugar if you want, that'll make it even better. Cinnamon, too.
Corn - Dude, everybody loves corn.
Carrots - Buy them at the store, keep them in the fridge, wash and eat raw. That easy. Carrots are probably the most flavorful vegetable, so you don't need to do anything with them.
