Blizzard seems to be trying more and more to make horde races more relatable and sympathetic. This is not exclusive to the undead. and I think that it is stupid.
The question of 'if these guys are really not so bad, then why is the horde and alliance even fighting' is all too common now because of this.
If I were to ponder on why this is, it's probably because a story where they actually stand their ground on character consistency would actually provide MEANINGFUL evolution to the story that you seem so concerned about.
