they're champs with tools for every situation and which have an answer to anything you might throw at them. obviously them having all this stuff means they have tons of choices that are not available to other champions, which is what makes them incredibly fucking frustrating to deal with
i mean
worrying about mana? don't worry
cooldowns? short as they can be
mobility? in spades
hard cc? naturally
shields to counter burst? naturally
great scaling while still being strong at all points in the game? yes, so you can fight against anything
can be laned into anything due to no natural counters? yes
incredibly fast waveclear AND jungle farming to make sure you never fall too behind? yes
the list goes on and on. this versatility is also why you can main these champs and play them exclusively and still do well. you can main somebody like Ashe as much as you want, but extreme dive will fuck you up and supports like Naut or Blitz will forever counter you in lane. this does not happen with these champs
this however is something that stems from the fact you have to unlock champions. and whether making champs this versatile is good design is another question whatsoever.
