Sword & board, (Arguably 2 handed hammer depending on your play style), Rifle/shotgun
>Why do so many Whitches fucking suck on difficulties higher than Hard?Two reasons. One because they don't have as strong of a melee weapon to fall back on if the enemy gets close. Two because they are heavily reliant on the rest of the team positioning well to be effective.
>Elf is either THE worst or THE best, why?Using anything other than the auto bow forces you to go for headshots. Projectiles take a while to hit the target, and arc a little, making it harder for the average player to do it consistently. Their melee weapons are reliant on moving properly to make sure you stagger all the enemies in front of you. A lot of people use the light/medium bow and don't realize they are made mostly for hip firing, instead of just grabbing a long bow if they are going to aim down to kill specials, etc.

Fatshark has said they are working on optimizing the game for CPUs which are the issue for most people though.
