First of all, the only pure element build that is worth considering is pure lightning. Pure lightning has trouble with immunes. There's nothing you can do about it except get a really good merc and/or expensive gear. Pure fire is a waste of points and pure cold is also a waste of points but some people do it anyway because if you only play certain parts of the game you can maximize your damage potential without being concerned about immunes.
Most sorcs, especially untwinked sorcs, focus on some balance between fire and cold. There's a lot of different ways this can go. Meteorb is a fire-heavy build that provides acceptable cold damage that scales very well with gear. There's also the blizzard/fireball sorceress which gets better cold damage at the expense of fire damage; fire is mostly just relegated to killing cold immunes in such a build until you start getting good gear. There are more obscure build combinations that use firewall and glacial spike as well as blizzard/fireball sorceresses that focus on fireball damage instead of Blizzard; they're all about equally viable for an untwinked character so you should pick whichever one interests you the most. Note, however, that meteorb and lightning sorceresses will always benefit the most from good gear, so if you've got it it's probably one of those two you want.
Fire/cold hybrid sorceresses also have static field, which expedites the process of killing enemies immune to your primary element. All in all, sorceresses are very well prepared to handle immunes as long as you don't make a pure lightning sorceress without the appropriate gear.
